Every great work of art in this city, every great recipe, has deep roots in the past. To appreciate the richness of Rome you have to dig deep below the surface, like an archaeologist. And I’ve been doing a lot of digging recently.

I can’t tell you that I’ve always loved Rome; it was a mystery to me for many years. I was born in the 1960s, in northern Italy. We went on holiday to the mountains, or to the seaside in Liguria, or occasionally to Rimini, in Emilia-Romagna. But to Rome and the south? Never.
